In your salad dressing, a drizzle over cooked meats and fish, to finish off a lovely home made soup?
All are good but how about in a cake. Use olive oil to replace your animal fats in a cake. This recipe for a lemon cake is seriously good and produces a wonderfully moist cake that because of the oil keeps very well.
2 cups of sugar
1 cup of plain yogurt
3/4 cup of extra virgin olive oil
Rind of 3 lemons
add 2 cups of self raising flour and bake
(a ring tin is ideal) for 45mins at 180°c. When cooked top with 1/4 cup of sugar and a 1/4 cup of lemon juice.
It is truly delicious. May not come to mind immediately as part of the Mediterranean diet but is none the less full of lovely extra virgin olive oil.
