Cuoco - the Cookbook
We wrote and produced our recipe book "Cuoco" (which means chef or "I cook") here at Casa Margherita to celebrate the wonderful array of products grown here in Umbria. With 28 delicious recipes in 64 pages you can explore the tastes of Umbria at home. All recipes are expressed in both grams and ounces with delightful photography of every dish.
Umbria has its own culinary map with many towns and villages associated with a particular product – Trevi with olive oil, truffles and its unique ‘black’ celery, Montefalco with Sagrantino wine, Cannara with its onions, Norcia with pork and wild boar, Perugia with chocolate and Cascia with saffron. "Cuoco" takes you on a culinary journey through the delights of Umbria. We hope you will be inspired.

Umbria has many artisan chocolate makers and its regional capital, Perugia, is home to the largest and most famous, Perugina, who make the Baci chocolate. In October, Perugia hosts a chocolate festival when the centre of Perugia is crammed with stalls selling all kinds of choccy delights. Criminally lacking in imagination is the name of the festival – Eurochocolate – but don’t let that put you off. This dessert is a chocoholic’s delight. Use the best plain dark chocolate you can buy.
175g (6 oz) dark chocolate
(at least 85% cocoa ideally)
75g (3 oz) caster sugar
6 egg whites
¼ teaspoon raspberry vinegar
You need to melt the chocolate in a large mixing bowl over a pan of boiling water. Whisk the egg whites and raspberry vinegar together until you have a mixture that will make soft peaks. Add the sugar and mix until you have a mixture that forms stiff peaks.
Now fold half of the egg mixture into the melted chocolate and mix well. Then slowly add the remaining egg mixture combining gently with the chocolate. You need to mix gently so as much air as possible remains in the mousse.
Pour into four separate dessert bowls and place in a fridge for a couple of hours.
